Panamanian cuisine is a mix of African, Spanish, & Native American techniques, dishes, & ingredients, which reflect its diverse population. Since Panama is a land bridge between two continents, it has a large variety of tropical fruits, vegetables, & herbs that are used in native cooking.

This Panamanian chorizo is made from coarsely chopped pork. Served with patacones, tostones, or yuca.
They are made with yuca that is boiled, mashed, & then stuffed. Carimañolas are a yuca dough filled with a tasty spiced beef mixture.
The chicken tamale is a very common dish in several countries & its peculiarity is that the wrapper leaves are vegetables. In Panama, the tamale is made of banana leaves that are cooked along with corn dough mixed with raisins & a little bit of broth. Then it is stuffed with chicken, vegetables, cheese, or pork.
